Shelby restaurant inspections: Oct.-Dec. critical violations

The following restaurant inspections with critical violations were conducted by the Shelby City Health Department October through December:

Shelby IGA, 140 Mansfield Ave., Shelby, Oct. 10. No safe handling instructions on packaged raw meat (critical, corrected during inspection). Observed beef labeled as pork and had no safe handling instructions. Meat department employee removed the products from consumer self service. Food not properly protected from contamination by separation, packaging, and segregation (critical, corrected during inspection). Observed raw animal foods (eggs) stored above raw ready-to-eat/prepared foods in walk-in cooler. Employee removed and stored the eggs correctly.

F.O.E. #763, 46 E. Main St., Shelby, Oct. 26. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected during inspection). No date marking on TCS foods in kitchen or walk-in cooler.

Shelby IGA Express, 147½ Mansfield Ave., Shelby, Nov. 30. Missing and/or incomplete allergen declaration(s) (critical repeat). Observed ham and swiss croissant with no labeling. All self serve foods shall be labeled. Manager removed the croissants from self service.

R. Chandat LLC, 172 N. Gamble St., Shelby, Nov. 14. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical repeat, corrected during inspection). Observed RTE foods not date marked to indicate the date by which the food shall be consumed or discarded.

Shelby Pre K- 8 School, 109 W. Smiley Ave., Shelby, Dec. 16. Insufficient air gap between the flood rim and the water supply inlet (critical, corrected during inspection). An extension was added into the drain from the three-compartment sink into the floor drain. To prevent sewage backup into a three-compartment sink, an air gap shall be provided. Manager removed the extension.

Shelby IGA, 140 Mansfield Ave., Shelby, Dec. 20. Handwashing sink is being used for purposes other than handwashing (critical, corrected during inspection). Observed a metal cleaning scrungy. Hand sinks shall be for washing hands and nothing else. Hot water for manual sanitization is below 171 degrees (critical). Both dishwashers in the deli area were not at proper sanitizing temperatures. Hand sanitize in three-compartment sink until repaired. Correct by Dec. 27. Hot water for mechanical sanitization is below required temperature (critical). Temperature not reaching sanitizing requirements. Facility shall have temperature measuring strips to use in hot rinse sanitizing units. Correct by Dec. 27. Missing and/or incomplete allergen declaration(s) (critical, corrected during inspection). Observed foods produced in house for consumer self service were missing list of ingredients. To prevent an allergic reaction, all foods for consumer self service shall have a list and sub list of all ingredients. Manager removed items and placed in deli case.

Kentucky Fried Chicken, 83 W. Main St., Shelby, Dec. 21. Food employee(s) not washing hands in approved handwashing sink or automatic handwashing facility (critical, corrected during inspection). Observed food employee wash hands in rinse compartment of the three-compartment sink. To prevent a contamination, hands shall only be washed in approved hand washing sinks.

Ted & Ali's Café LLC, 69 N. Gamble St., Shelby, Dec. 22. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected during inspection). Observed TCS/RTE foods not in original packaging without date marking. Employee dated foods as required.
