- 羽衣甘籃XO醬炒年糕 ~ 羽衣甘籃一個在外地硏究已指出超級食物,屬十字科蔬菜,可炒同時也可做沙律、 口感方面比我們一般常吃的蔬菜類較為粗鞋, 所以有些人會將它用來榨汁、 如果我們用作食就要先將莖部剪去, 只用上葉的部份會較為好。。。 (材料) 1)羽衣甘籃 適量 2)XO醬 適量 3)上海年糕 三片 4)鼓油 適量 5)蒜片 適量 6)老抽 適量(可隨個人喜歡作增色之用) 7) 清雞湯 少許 (做法) 1)將羽衣甘籃莖部剪去,清洗備用 2) 蒜片起鑊加油,將羽衣甘籃落鑊繼而放年糕煮一會加入少許清雞湯及XO醬同炒、收中火再煮一會加入鼓油調味, 如果想將色擇調深一點可在此時加入腦老抽,待年糕軟身後試味後便大功告成。 小記: 上海年糕建議在上海舖買上浸在水中的石磨年糕,因為煮出來會更加軟糯、 大約每件為HK$二至三元一件, 不在即日煮的時間可同樣放在清水內浸著! ☆如果沒有(清雞湯)可以用熱水代替, 而清雞湯的作用除了增加水份外,亦多一份味道而言☆ http://applepurehk.blogspot.com/2018/07/xo.htmlhttps://www.youtube.com/channel/UCavncgIE7we3tM037MAVk1Q
