But for a few finishing touches — including a sign installation and an oven test-drive — the old Pony Express Pizza in Stow is ready to open under a new name.

After 10 months of preparation, Twisted Tomato Pizzeria has scheduled a Monday grand opening for its new location at 3031 Graham Road. Owner Brad Cover said that he's got some surprises to roll out on opening day, and the shop will also a host a ribbon-cutting ceremony at 11:30 a.m. Wednesday.

The opening has taken such a long time to come to fruition that one social media commenter jokingly said they'd believe the store is open when they see it for themselves. Cover said it took so long that people were dropping notes in the mail box offering to buy the place from him.

As is the case with the Cuyahoga Falls location, the Stow Twisted Tomato will only be open for takeout and delivery to start. Job hunters take note: even though Cover is preparing to open in less than a week, the Stow store is still in need of cooks and delivery drivers.

This is the third Twisted Tomato location to open in as many years. The first location opened in January. 2020 in Cuyahoga Falls on Bailey Road. The second came to downtown Akron's South Main Street a year later.

Cover said a mix of ambition and community support are driving Twisted Tomato's rapid expansion.

"Cuyahoga Falls really kind of just set us on fire," he said. "I thought there would be a period of slow down, but no. It's just been non-stop craziness."

Cover is euphoric over the prospect of finally opening this new location, saying that he's grateful for his staff and his wife.

"We're excited to be able to open up our doors," Cover said, "and give them something twisted in their lives to fall in love with, just like every other community has."
