Southern comfort food restaurant Subourbon takes over former Crafty Pint location

A new Southern comfort food restaurant is bringing creamy mac n' cheese, crispy fried chicken and savory seafood to the Northwest Side..

Subourbon Southern Kitchen and Spirits has taken over the former Crafty Pint locationat 2234 W. Dublin Granville Rd. in Linworth. The new restaurant is owned by Patrick Marker and Jacob Hough, who opened Alqueria Farmhouse Kitchen in January 2019.

Hough said he and Marker wanted to open another location together, but were slowed by the COVID-19 pandemic. Subourbon combines Southern influence with Marker's affinity for bourbon, which the pair have collected throughout the years, he said.

"It just made sense," Hough said. Subourbon opened to the public Monday, following a Sunday soft opening.

"I have all kinds of emotions going on," he said during the soft opening.

Heather Delpra, a host, said she wanted to work at Subourbon because it reminded her of food from home in Pensacola, Florida.

"I think the flow of the restaurant has been really great," Delpra said. "Everybody's working together really well."

Odine Hong, Subourbon's executive chef, previously worked at Alqueria and, most recently, as a sous chef at Hen Quarter, where she cooked primarily Southern cuisine.

"She's got a little Asian influence, and then she wanted to do some vegan options," Hough said. "Instead of doing fried chicken, she wants to do country fried chicken with that nice, thick gravy on there. And we'll have some unique things like pork belly and catfish bites."

In addition to some new flavors, Subourbon features Southern classics such as catfish po'boy, seafood gumbo and fried green tomatoes. Naturally, it also features a wide selection of bourbon, in addition to cocktails, beer and wine.

Hough said he and Marker reached out on Facebook to the owner of The Crafty Pint, which occupied for space for the past seven years, to see if it was available.

With a covered patio complete with string lights, Hough said he and Marker wanted to keep the space comfortable and maintain the rustic atmosphere.

Subourbon is open from 4 p.m. to 9 p.m. Monday through Saturday.
