A Springfield restaurant had catfish on its menu. Food inspectors found that wasn't true.

While a Springfield restaurant boasted catfish on its menu, a Feb. 22 inspection revealed that claim to be false.

What City Cafe, 2129 W. Republic Road, had listed on its menu as catfish was actually swai fish, a freshwater fish from southeast Asia. While swai is a relative of the American catfish, the Federal Food, Drug, and Cosmetic Act says food is misbranded "if it purports to be or is represented as catfish, unless it is fish classified within the family Ictaluridae." Swai is a member of the Pangasianodon family. Inaccurate menu listings are considered a non-priority violation.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

One priority violation: Observed bottles of alcohol and peroxide above food items, which were relocated. One non-priority violation: Observed the floor in produce refrigerator and fan shield in dairy cooler were not clean.

Arna's Food Mart, 4912 W. Chestnut Expressway, Springfield. Feb. 17 routine inspection – Result: active. Discussed adjusting hot water on one of the men's restroom sinks and proper installation of hose bib backflow prevention divide on mop sink. One priority violation: Observed chicken held at 131 degrees Fahrenheit in hot holding unit. Corrected by reheating to 165 degrees and turning up hot holding unit. One non-priority violation: Observed a box of foam food containers and a bag of plastic tea jugs stored on floor. Corrected at time of inspection.

Ash Grove Sunshine Center, 310 N. Perryman Ave., Ash Grove. Feb. 16 routine inspection – Result: permitted with re-inspection. One priority violation: Observed hose connected to faucet at service sink without a backflow preventer being installed.

Asian King Buffet, 3130 S. Glenstone Ave., Springfield. Feb. 16 routine inspection – Result: active. Two priority violations: Observed can opener not found clean; observed plastic bins used to hold foods cracked and chipped. One non-priority violation: Observed several potentially hazardous food items not correctly recorded for time control purposes. Methods to be modified for future use.

Big Whiskey's American Bar & Grill No. 3, 1440 W. Republic Road, Springfield. Feb. 16 routine inspection – Result: active. One priority violation: Observed spinach dip and buffalo dip in walk-in cooler at 72 to 101 degrees, time stamped from 11 a.m. and noon, respectively. Required: Cool potentially hazardous foods from 135 degrees to 70 degrees within two hours, then 70 degrees to 41 degrees within four more hours. Corrected on-site. Education provided; discussed using large metal pans and using two for one batch that will create more surface area and allow potentially hazardous foods to cool quickly on ice bath. Manager has a new cooling log on-site that he is posting. One non-priority violation: Observed vent hood frames and filters have heavy grease build-up. Required: Increase cleaning frequency to prevent built-up of grease and debris.

Bolton's General Store, 7326 State Highway BB, Willard. Feb. 22 routine inspection – Result: active. One priority violation: Observed refrigerated, potentially hazardous foods were beyond use-by dates or lacked documentation, including ham (Feb. 21), sloppy joes (Feb. 20) and no dates on sausage or hamburgers. Foods were discarded or labeled. One non-priority violation: Observed water leaking into cabinet under three-vat sink.
