Owner Vincent Cessna shared on the Vincent’s Pastaria Facebook page that he will be having surgeries in January, including hip replacement surgery, and the restaurant will be closed for an extended period of time.

He said he doesn’t feel comfortable selling gift cards to his customers when they wouldn’t be able to use them for possibly as long as six to eight weeks, although he’s hoping to be back sooner than that.

A traditional dried schnitz pie recipe to try for the holidays

Nineteenth-century Zoar was known as the “the village in an apple orchard,” where they grew and preserved apples to be used in traditional German dishes throughout the year.

The dried schnitz pie became a popular holiday recipe, which used apples dried after Zoar’s fall harvest. The dried apples were soaked, ran through a colander and seasoned with sugar and spices, giving the pie filling a consistency similar to applesauce or apple butter.

The following recipe comes from the book “Apple Recipes from Historic Zoar Village” and was developed by a former Zoar resident, Fern Coulter. The 32-page book of historical recipes can be purchased at zoarstore.com and in the Zoar Store at 198 Main St.

Dried Schnitz Pie recipe

  • 2 cups dried tart apples

  • ⅔ cup sugar

  • 1½ cups water

  • ¼ tsp. powdered cloves

  • ½ tsp. cinnamon

  • Pastry for two-crust pie

Soak apples in 1½ cups warm water. Cook apples in soaking water. When soft, rub apples through a colander. Add sugar and spices. Put mixture in unbaked pie shell and cover with top crust. Fasten at edges. Bake at 425 degrees for 15 minutes, reduce temperature to 375 degrees and continue baking for 35 minutes.
