This Mango, Lime And Passion Fruit Pudding Will Bring Some Sunshine To Your Table

At the tail-end of winter, I always start to crave fresh, citrusy desserts. This Mango, Lime and Passion Fruit Pudding has a real zing to it and makes you feel summer’s not too far away. I’m always on the search for foolproof, easy recipes, and this is one of my favourites.

It was originally inspired by a Mary Berry recipe, but I’ve altered the quantities and ingredients to suit my own personal tastes. I’m rather pleased with my version!

I recommend serving this after a light fish dish, as it’s surprisingly filling. The fruity flavours offer the perfect finish to the meal.

Mango, Lime and Passion Fruit Pudding (Serves 2-3)

Ingredients:

  • 450g mango, peeled and cut into small chunks (to make this really easy, buy a bag of prepared mango that has been peeled and cut up).

  • 250ml double cream

  • 125g good quality lime curd

  • seeds scraped out from 3 passion fruit

  • juice and zest of ½ a lime

Method:

  1. Reserve about 50g of diced mango for decorating at the end.

  2. Place the rest of the cut up mango in a food processor and blend until well pureed.

  3. Mix the lime curd and lime juice together with a spoon.

  4. Whip the cream until soft peaks form, then gently stir in the lime curd & juice mixture. It doesn’t have to be completely stirred in - there should be a ripple effect.

  5. Start to layer your glasses: add a layer of the mango puree, followed by a teaspoon of passion fruit seeds; next dollop on the whipped cream & curd mixture. Repeat, until you have reached the top of the glass (the whipped cream should be final layer).

  6. Decorate your puddings with the reserved fresh mango, a dribble more of passion fruit and a sprinkling of the freshly grated lime zest.

  7. Dig in and enjoy!

This dessert is a delight for the eyes as well as the stomach, and it’s bound to impress. You can make up the separate components in advance and store them in the fridge, ready to be assembled later, so you really are guaranteed stress-free entertaining.
