Here are Thurston County food safety scores for Oct. 25

Comments are taken directly from the latest Thurston County Public inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days.

  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • A food worker was observed handling ready-to-eat foods with their bare hands without a written and approved plan.

  • Cooked pasta was improperly cooled.

  • Cut tomatoes were between 43-49 degrees rather than at or below 41 degrees.

Mayan Family Mexican Restaurant

2120 Marvin Road Northeast, Lacey

Food Service Establishment

Oct. 17: 45 red points; 15 blue points.

Comments:

  • Food workers were observed scooping chips with their bare hands. Food workers may not touch ready-to-eat food with their bare hands.

  • Various TCS items in cold holding, such as salsa and sour cream, shredded lettuce, salsa and cut lettuce, were at temperatures above 41 degrees. TCS foods must be cold held at or below 41 degrees.

  • Workers did not use a thermometer to properly evaluate food safety temperatures.

  • The menu lacked a proper consumer advisory. The menu did not have a disclosure statement for eggs which can be cooked to order.

  • The walk-in cold-hold was not properly keeping its temperature at 41 degrees or lower and needed repairs.

  • An ice machine was dirty with a mold-like substance. Tortilla shells were stored near a fly trap. A rice scoop lacked a handle. Foods must be properly protected from potential contamination.

  • Ware washing facilities were improperly maintained. A sanitizer chemical was absent.

Tenino Market Fresh

669 East Lincoln Ave. East, Tenino

Food Service Establishment

Oct. 17: 45 red points; 5 blue points.

Comments:

  • Soap dispensers in the employee and customer restrooms were empty.

  • Chicken, breasts, mac and cheese and mashed potatoes were hot held at less than 135 degrees.

  • Potato salad and pasta salad in a display case was not held at proper cold holding temperature overnight. The affected items were disposed of during the inspection.

  • The faucet of a food sink did not have and intact spout and needed repairs.

The Greenery at Evergreen State College

2700 Evergreen Parkway, Olympia

Food Service Establishment

Oct. 20: 35 red points; 0 blue points.

Comments:

  • Cooked fish was between 120-125 degrees under a heat lamp on the service line. TCS foods shall not be held at or above 135 degrees.

  • A sliced melon in a two-door reach-in cold-hold was at 46 degrees rather than at or below 41 degrees. Cut melon on the service line was 41-51 degrees.

Buffalo Wild Wings

1614 Black Lake Blvd. Southwest, Olympia

Food Service Establishment

Oct. 19: 25 red points; 5 blue points.

Comments:

  • Multiple food workers had food worker cards from an unapproved vendor. All food workers must have a valid Washington state food worker card available upon request.

  • A hand wash sink in the corner of the kitchen was blocked by trash cans. Another hand sink next to the line and sauce station was blocked by a trash can. The server station hand wash sink lacked paper towels. Hand wash sinks must be properly stocked and cannot be blocked.

  • Sliced tomato in the prep line was 43-45 degrees rather than at or below 41 degrees.

  • A to-go hot-hold cabinet thermometer was not working.

  • A chlorine sanitizer solution was too weak.

Subway

Comments:

  • Food workers were unable to present their food worker cards during the inspection.

  • Shredded cheese on the right side of the prep table was between 43-45 degrees rather than at or below 41 degrees.
