Tous les Jours, a new French-Korean bakery, opens in North Quincy

QUINCY − Amid a stream of customers ogling croquettes, sweet breads and cakes, Mandy Chen trained her new staff and made sure the display trays were well stocked.

It was a busy week for Chen, the manager of Tous les Jours on Billings Road in North Quincy, where the French-Korean bakery opened July 17.

"Training does take a while," Chen said. "In order to work with us, there is a lot of memorization needed. It requires at least two weeks' training time."

The café is still in the "soft opening" phase. The grand opening will be July 31, when a full promotional campaign gets underway. On that date, Chen said they will launch a delivery app and start taking orders for cakes.

Until then, customers must visit the store and choose from what they see in stock, which is no slim pickings. Chen displayed a freshly made Mango Cloud Cake, as soft and fluffy as the name suggests. True to its name ("tous les jours" means "every day" in French), everything is freshly baked in-house every day.

Other offerings include a sweet potato mousse cake and a birthday cake with chocolate buttercream in a chocolate shell shaped like a cute cartoon bear.

The menu doesn't cater only to the sweet tooth.

"There is a savory option as well," Chen said. "We have a sweet frank roll, sausage onion pastry and croque monsieur." The latter consists of ham and cheese between two pieces of pan bread with cheese on top as well, Chen said.

Chen said some of the more popular items have been the milk cream bread, which is round and slightly domed with cream inside.

"They've already sold out today, so I wouldn't be able to show you," Chen said.

"Also, the croquettes (are savory)," she said. A croquette is a deep-fried roll originating in French cuisine. At Tous les Jours, they come in flavors that illustrate the bakery's signature French and Korean blend − for instance, kimchi and curry.

The bakery also offers beverages.

"We have iced drinks: iced matcha (green tea) latte, iced ube latte, iced strawberry latte," Chen said. "We also have strawberry and matcha frappes."

The location on Billings Road is spacious, with room toward the rear to sit and work while enjoying a drink or to share pastries with friends. The breads and pastries are laid out toward the front of the shop, where there's enough space to look around at your own pace without bumping shoulders with other customers.

When you enter the store, a window on the left provides a view of a section of the kitchen where Tous les Jours' four pastry chefs put the finishing touches on cakes and other baked products.
