There’s only one way I eat a steak: medium.

On a recent visit to the Golden Ox restaurant in the West Bottoms, I decided to give my 15-year-old son, Giulian, a quick lesson on how to order beef properly prepared.

Any steak cooked more than medium is a terrible idea, I told him. He prefers his meat well done.

“Ordering a steak well done is an insult to the chef,” I said to the kid. He seemed confused. I commanded him to eat the cut my way. Giulian, or Baby G, is not a picky eater. He likes what he likes, though.

“OK,” he said.

I was surprised.

The Golden Ox is known as Kansas City’s oldest steakhouse. We went on assignment for The Star’s Let’s Dish restaurant series. Our charge was to recreate as best we could the order Kansas City Chiefs tight end Travis Kelce placed when he celebrated his 34th birthday there with friends. (Taylor Swift didn’t come to town until the next day.)

On Oct. 5, he reportedly ordered a meal fit for a multimillion-dollar hungry pro athlete.

According to People magazine, Kelce chomped down on a 24-ounce dry-aged porterhouse steak, lobster mac and cheese and broccolini, with a filet on the side.

Baby G and I settled on a 16-ounce, bone-in Kansas City strip ($59), the Golden Ox’s signature steak.

I mean, in Kansas City, how can you go wrong with a strip steak? You can’t.

“The steak that was born here,” the restaurant’s menu reads.

For side dishes, we chose the lobster mac and cheese ($14) and Parmesan creamed spinach (this bad boy, priced at $9, almost stole the show). We ordered one of each to share. We both agreed we’d get our own bowl of lobster mac and cheese next visit. The dish was deliciously divine. One serving wasn’t enough.

When we arrived we were shown to a dimly lit table. Within minutes, our drink order was taken: water, a soft drink ($3) for me and lemonade ($3) for Giulian.

Warm bread and butter was placed on the table. We perused the menu. Kelce and his crew reportedly ordered like ballers. Though The Star was paying, our meal was more budget-friendly.

Giulian and I split a wedge salad ($13). We also shared the strip, which was dry-aged for 21 days, according to our hosts. I may or may not have shown Baby G the correct way to gnaw meat from a bone with teeth. At a fine-dining establishment, maybe there is no correct way?

I sliced into the steak, grilled over an open fire of oak and pecan, according to our server, Russel Rea.

The oak is for the heat and the pecan is for the flavor, Rea said. The meat is seasoned with just salt and cracked pepper, he said. My goodness, the flavor of the steak popped with each bite.

As I cut, juices flowed onto the plate. I showed Giulian the warm pink center of the meat. He was reluctant to tear into the piece I’d cut for him.

“Try it,” I said. “If you don’t like it, we can always order you a steakburger and some fries. But you shouldn’t come to a steakhouse and order a burger.”

The steak was a hit. We were surprised by the Parmesan creamed spinach, though. It was extra creamy and good. We liked that dish just as much as the lobster mac and cheese.

This was our first visit to the iconic steakhouse. I couldn’t have asked for a better spot to teach my kid how to order a steak.

Medium or else. I’m happy to say he liked it.
