This unique Whatcom County food truck offers forest views and Asian-inspired cuisine

Bellingham is known for its many food trucks, but last year a unique truck opened, serving Asian-inspired cuisine surrounded by green forestry.

Transition Bicycle Company created the Transition Outpost, a beer and food hall and bicycle shop in Bellingham and expanded the restaurant’s reach by taking it on the road in November 2022.

“When we opened Transition Outpost, our vision was to create a place for people to gather and build community. Oftentimes this might be over a shared love of bikes but we were also excited to welcome anyone in the community looking for a great beer selection and a fun place to hang out. Adding food to this vision was a logical next step, we knew it would enhance the customer experience allowing people to enjoy a meal and relax together,” Kari Young, Outpost Eats creative director wrote in an email to The Bellingham Herald.

The Transition Outpost serves local beer as well as nonalcoholic beverages and snacks. But when the Outpost Eats food truck is parked outside, visitors can try exotic dishes.

“We serve comfort foods like fried rice, pulled pork and hamburgers but with flavors that are fresh and unique. For example, our pork sandwich is similar to pulled pork but is cooked in a Vietnamese-style caramel sauce instead of BBQ sauce. Our hamburger is served as Loco Moco — on rice with gravy, sauteed mushrooms, onions & a fried egg on top. We do a fairly traditional lemongrass pork bowl but have added a fresh pineapple and cucumber salad,” Young wrote.

The food truck also has vegan and vegetarian options. Its most popular dishes are the coconut chicken bowl and the Thai basil tofu bowl, according to Young.

When the food truck is parked at Transition Outpost, visitors can also enjoy being surrounded by green forestry at the base of Galbraith Mountain.

The Outpost Eats food truck can be found at Transition Outpost from 11 a.m. to 7 p.m. Friday through Sunday at 5090 Samish Way. From 3-8 p.m. on Thursdays, the food truck will be at Wander Brewing at 1807 Dean Ave., Bellingham.
