Vegan food truck Lucky Goose opens brick-and-mortar location
Nov. 26—Food truck Lucky Goose, which has catered to meat-free diners with vegan milkshakes and plant-based burgers, had its grand opening for its Nob Hill space on Friday.
Vegan couple Rafael Guillen and Melissa Timmons moved from Los Angles back to Bosque Farms, where Timmons was originally from, two years ago.
Guillen found that there were few vegan options in Albuquerque.
"In LA, plant based foods is like a very common thing," Guillen said. "And then here, there wasn't anything available, so we really wanted to build something that had like, really craveable flavors, and the kinds of things that people want to come back to."
The couple spent a year developing a plant-based burger recipe. Earlier this year, they debuted a vegan milkshake at their warehouse space. Previously, they had sold their food out of their food truck at breweries around the city. But the success of the limited seating at the warehouse convinced the couple to look into opening their own storefront.
"Once we started doing milkshakes and opening a small seating space ... we got a lot more traction," Guillen said. "People would come just for us, as opposed to coming to a brewery and ... we just so happened to be there and they would eat our food. So it gave us a really good indicator that getting a storefront and having a permanent storefront would be a really good idea."
The restaurant is located at 3503 B Central NE. It's open from 12 p.m. to 8 p.m. Friday through Sunday, and 4 p.m. to 8 p.m. Monday and Tuesday.
