Versailles and this Miami chef created a Cuban sandwich pizza. Here’s where to get it

If Cuban sandwiches and pizza are Miami’s favorite foods — and we’re not listening to anyone who says otherwise at the moment — then the Cubano pizza is the ultimate Miami meal.

The pizza was born of a collaboration between Michael Schwartz’s Harry’s Pizzeria and the famous Versailles Cuban restaurant and gathering spot in Little Havana, home of El Cubano sandwich.

The creation made an appearance back in the olden times (January of 2019), and now is returning to Miami for the entire month of September. Think of it as an open face Cuban sandwich with a bit of extra cheese. It’s a white pizza, no tomato sauce involved, glistening with roasted pork and glazed ham, bread and butter pickles, Fontina and Gruyere cheese and — brace yourself — mustard sauce.

And on top, well, really, what else could there be but one of Versailles’ world-famous croquetas?

As for Schwartz and the Valls family, owners of Versailles, both are happy to be rekindling this collaboration.

“I’ve been a fan of Versailles since moving to Miami in the early ’90s,” said Schwartz, the James Beard Award-winning chef who’s also the force behind Michael’s Genuine Food + Drink in the Design District and Amara at Paraiso in Miami. “As a chef I have a keen appreciation for the family’s commitment to keeping it simple, doing things right, and bringing the community together.”

“We are thrilled to again be partnering with Harry’s Pizzeria,” said Versailles owner Nicole Valls. “Our family is a huge admirer of Chef Schwartz and all he has done for the Miami food scene and we are excited to have everyone taste this spin on Miami’s iconic dish.”

You can order the pizza starting Sept. 1 through Sept. 30.
