What's Fort Collins' signature dish? (and don't tell us beer)

Let's have a little fun. Earlier in January, staff at the Coloradoan started thinking about what March Madness-style food bracket we'd publish this year. It's a fun annual diversion to recognize the Choice City's top eateries for their burgers, breakfast burritos, beer and more.

But this year's conversation got us thinking: Does Fort Collins have a signature dish? Pueblo has green chile, Philadelphia has the cheesesteak and so many places have barbecue. But does Fort Collins have a signature dish that you tell visitors to try? Is there a particular dish you try at multiple locations that feels unique to the town?

And don't tell us beer. Try as we might have in college, it's impossible and inadvisable to subsist on beer alone.
