The restaurant, located inside Goose and the Monkey Brew House in the Lexington Historic Depot District will start serving fire-kissed brick oven pizzas on Feb. 25, said owner Tyler Prevatte, whose partners are his wife, Madison Prevatte, as well as Brent and Ashlee Moore, who own the brewhouse. The business partners first opened Pour Folks Pizza, a food trailer that was parked on a cement pad outside Goose and Money, in March 2021. They phased out its use after opening Pour Folks Provision in February 2022, and recently sold the food trailer which is operating under a different name. Pour Folks Provisions has evolved from the gourmet sandwich and appetizer restaurant it was in the beginning. It also served a few select flatbread pizzas.. It recently added popular bibimbap rice bowls, such as the gojuchang and teriyaki marinated chicken and stopped offering sandwiches.

"We're already known for our artisan, craft beers and knowledge of beer," he said. "We want to take the same pride in offering our food to our customers. We started with the flatbread pizzas. Our brick oven pizza is a close cousin."

Prevatte said they have been working with a chef from U.S. Foods to learn how to make the best round, brick-oven pizza crust, homemade sauces and more. They are sourcing local to the Piedmont Triad ingredients to use on the pizzas from the cheese to the vegetables and meats.

"When the Lexington Farmers Market opens, we want to work with local producers to use food grown right here on our pizzas," Prevatte said.
