Wichita will add this popular East Coast pizza chain in about a week

Many Wichitans have been eagerly awaiting the opening day for Grimaldi’s Pizzeria, a popular pizza chain that originated in Brooklyn and serves authentic New York-style pizza.

Now, opening day is just about a week away.

The restaurant, which is taking over the former Zoe’s Kitchen space in the Waterfront Plaza at 13th and Webb, will officially open to the public on Thursday, April 27. (Passers-by might notice some activity the night before as the restaurant puts on its invite-only VIP soft opening.)

Grimaldi’s is known for making its pizzas in a coal-fired brick oven, which achieves a crispy, smoky crust. It offers 12- 16- and 18-inch pizzas, and customers can choose a base of tomato sauce, white sauce or pesto sauce before adding toppings.

The menu also includes specialty pizzas like the NY Hot Dog Pizza, topped with hot dog slices, red onions, sauerkraut and stone-ground mustard, and The Don, topped with meatballs, Italian sausage and pepperoni. The pizzas are made with fresh sliced mozzarella cheese, and diners also can choose cauliflower and gluten-free crust.

Also on the menu: calzones, salads, appetizers and desserts including different flavors of cheesecake and cannoli plus tiramisu. Grimaldi’s has a full bar, and the drink menu features wine and sangria as well as Italian sodas.

The Waterfront restaurant will be the second Grimaldi’s in Kansas (the first is at 5601 W. 135th St. in Overland Park and opened in 2015) and the 43rd nationwide. Wichita’s restaurant has 3,128 square feet of indoor and outdoor space. The main dining area has 68 seats, and the restaurant also has a 50-seat covered patio with fans and heaters.

The dining room has “classic New York decor,” according to a news release. The tablecloths are classic red-and-white checkered, and the chandeliers are made from wine bottles.

Grimaldi’s is open for lunch and dinner. Its hours are 11 a.m. to 9 p.m. daily. Keep reading to see the full menu.
