'Worth the wait': New Metro Centre restaurant gets ready to open

The Queen of Squash will hold its grand opening on April 29, with doors opening at 11 a.m.

In the event description on Facebook, the restaurant started with a message for customers: "The best things in life are worth the wait!"

Owner Heather Wolbeck has been working to open the Queen of Squash for over a year. Located at the Metro Centre, the space was previously home to Cracked Pepper Cafe.

The menu will feature clean, healthy options. The restaurant has announced items such as summer squash bruschetta on cucumbers, turkey smash burgers and butternut squash flatbread. The eatery is continuing to hire cooks ahead of its opening, according to the business's Facebook page.

The Peoria Area Chamber of Commerce will hold a ribbon cutting at 2 p.m. and various bands and artists will appear from 2 to 8 p.m. Cookies, giveaways and a photo booth will also be available.
