  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • Raw eggs stored above RTE celery and cut lettuce in the walk-in cooler.

  • Observed open boxes of steak meat, hamburgers and mozzarella sticks unprotected in reach in freezer unit and subject to potential contamination due to excessive build-up of ice and frost that is falling onto the boxes.

  • Contents of sandwich making station was held at or above 58 degrees Fahrenheit, rather than 41 degrees or below as required. Corrected.

  • Refrigerated ready-to-eat, time/temperature control for safety food, such as lunch meat, cheeses, cooked chicken wings, sauces, prepared in the food facility and held for more than 24 hours, located in the walk-in and cold holding units, is not being date marked.

  • Two storage bins holding cutting boards, food pans and lids, had non-food contact surfaces exposed to splash, spillage, or other food soiling, made of raw wood, and absorbent and rough material.

  • Not enough drainboards, utensil racks, or tables to allow for storage of soiled an/or cleaned items before and after cleaning.

  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.

  • Sanitizers used to sanitize equipment and utensils are not available for use during all hours of operation. Corrected.

  • Can opener, a food contact surface, was observed to have food residue and was not clean to sight and touch. Corrected.

  • Pizza dough pans, a food contact surface, were observed to have black residue and were not clean to sight and touch.

  • Exit screen door of the food facility has several gaps and does not protect against the entry of insects, rodents, and other animals.

  • Soap was not available at the handwash sink in the kitchen area. Corrected.

  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • Observed visible evidence of rodent droppings in the coffee storage inside opened boxes of coffee, sugar and single use supplies. Food was subsequently discarded.

  • Observed wet wiping cloths in food service area, not being stored in sanitizer solution.

  • Cleaning agents/sanitizers used to clean/sanitize equipment and utensils are not available for use during all hours of operation.

  • Frozen slush machines dispenser spouts, a food contact surface, had black mold-like substance build-up on insides and was not clean to sight and touch.

  • Food facility has a certified food employee, but a certified employee was not available during all hours of operation, as evidenced by an inability to talk with the certified food employee during this inspection.

  • The handwash sink in the food service area does not have single-use towels, continuous towels, or air- drying device. Employee was using reusable hand towel to dry hands. Handwash sink the in the bathroom did not have soap or single use paper towels available. Corrected.

  • Toilet tissue is not provided at teach toilet.

  • Food facility inspection indicates evidence of activity by rodents on shelves under coffee station, but facility does not have a pest control program.

  • Potential rodent harborage areas inside the food facility observed in the back storage area due to large accumulation of old equipment and debris.

  • Observed poisonous or toxic material, Raid, weed killer, and hornet killer—other than those required for the operation and maintenance of a food facility, stored on shelf over manual warewashing sinks.

  • McDonalds, 60 Arsenal Road, Manchester Township

  • Violations:

  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • Observed hopper of ice stored in drive-through area uncovered and exposed to possible contamination and splash from coffee, creamer, sweeteners, employee clothing, single use items etc.

  • Observed slimy mold-like accumulation on contact parts of the Frappe machine. The wire grate over the fry warmer lights and light casing has accumulation of salt, dust, and oil. Dispensing nozzle on the soda machine located in the drive-through area was observed to have brown-gray residue and is not clean to sight and touch. Corrected. The hood case over the flat grill and over the fryers have heavy accumulation of old oil/grease build-up and static dust on areas directly over exposed food and food preparation.

  • Observed fryers, grills, cold holding equipment, in kitchen and food preparation areas, with a heavy accumulation of dust, dirt, food residue, debris on non-food contact surfaces.

  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil including but not limited to cooking equipment exteriors and all attachments.

  • Floor under ALL equipment in the kitchen, food preparation and warewashing areas of the food facility is extremely dirty, dusty, and in need of cleaning. Observed puddled coagulating cooking oil buildup, food, single-use items under the fryers and grills.

  • Two working containers of grill cleaner were stored above or on the same shelf with food, equipment, and/or single service articles in the flat grill area. Corrected. (Chemicals were removed and placed in chemical closet.)

Violations:

  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • The handwash sink in the employee toilet room is being used as a mop sink as evidenced by observed mop head hanging and stored in the sink. Person in Charge stated the handwash sink has been ordered and is to be installed "soon".

  • Dock door and employee door to the outside located in the backroom area of the food facility have gaps and do not protect against the entry of insects, rodents, and other animals.

  • Potential rodent harborage areas inside the food facility observed in the stock room area due to excessive clutter and debris.

  • Food facility inspection indicated evidence of rodents/insect activity in backroom (stockroom) and retail snack food areas. Observed rodent droppings in the chip and snack food aisles and the stock room of the facility.

Taqueria El Camino, 81 W. Canal St., Dover

Violations:

  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions.

  • Observed dried peppers in the back prep room in white bulk containers with moth-like insects.

  • Steak, pork, beef was held at 117 degrees Fahrenheit in the hot holding cabinet in prep area, rather than 135 degrees or above as required. Product was placed into oven to reheat to 165 degrees to be placed back into hot holding.

  • Cheeses and sour cream were held at 46-51 degrees Fahrenheit in the middle cold holding unit area, rather than 41 degrees or below as required. Food was discarded.

  • Food facility is reduced oxygen-packing pork, chicken, steak, beef, which has a potential for Clostridium botulinum/Listeria monocytogenes, without documenting or monitoring a secondary food safety barrier. HACCP plan is very hard to read and, from what the inspector could read from it, the facility is not following the plan.

  • Observed cold holding unit in the middle line close to flat grill not maintaining proper temperature. Ambient air temp holding at 46 degrees Fahrenheit rather than 41 degrees or below.

  • Can opener blade and three tongs, a food contact surface, was observed to have food residue and was not clean to sight and touch. Moved to dirty dish area.

  • Observed clean utensils stored in a white soiled bucket in the back prep room. Corrected. (Removed and placed in dish area.)

  • An insect control device (sticky fly paper) located in prep area between flat grill and storage shelves with potential to contaminate food, equipment, and/or utensils.
